Known affectionately as the Eikhaas (Oak Hare) or the Dansende paddenstoel (Dancing Mushroom), this impressive, woodsy fungus naturally grows in massive clusters at the base of oak trees. It produces beautiful, overlapping, wavy grey fronds that are prized for their rich, earthy flavor and exceptional health benefits. Cultivated on a hearty 2.5 kg block of premium hardwood enriched with 20% bran, this variety takes a little more patience to fruit than an oyster mushroom, but the spectacular, highly sought-after harvest is more than worth the wait.

Description

Growkit Instructions:

Step 1

Unbox the Block: Open your grow kit to reveal the 2.5 kg hardwood and bran substrate block (approx. 12.5 x 30 x 20 cm), fully colonized and ready for its fruiting phase.

Step 2

The Top Cut: Maitake prefers to fruit from the top surface of the block. Cut the plastic completely open across the top, leaving a generous 5 to 10 cm collar of plastic standing up around the edges to help pool humidity.

Step 3

Find the Right Spot: Place the kit in a well-ventilated area with indirect daylight. Since this block has already completed its warm incubation phase, a standard, stable room temperature is perfect for fruiting.

Step 4

Create a Humidity Tent: High humidity is absolutely crucial for Maitake. Drape a loose, punctured clear plastic bag or humidity tent over the block to create a steamy microclimate.

Step 5

Mist Daily: Using a spray bottle, generously mist the inside walls of your humidity tent 2 to 3 times a day. Avoid spraying water directly onto the exposed substrate.

Step 6

Practice Patience: Maitake is a slow-growing masterpiece. Continue your daily misting routine; fruiting typically takes a full 6 to 8 weeks. Eventually, you will see a dense, grey, almost brain-like mass forming on the surface.

Step 7

Watch the Fronds Unfold: As the cluster matures, that initial dense mass will separate and expand into the stunning, wavy grey leaflike caps (fronds) the Eikhaas is famous for.

Step 8

Harvest the Cluster: The Maitake is ready to harvest when the fronds are fully unfurled and the edges are still soft and pliable. Grasp the entire cluster at the woody base, twist gently, and pull it free to enjoy!
