Elevate your culinary creations with the Eryngii, widely known as the King Oyster or Koningsoesterzwam. Renowned for its firm, meaty texture and thick, savory stem topped with a delicate brown cap, this mushroom is a favorite among chefs and an exceptional plant-based meat substitute. While they naturally grow on the roots of umbellifer plants in the wild, our robust 2.5 kg sawdust and straw substrate blocks bring this majestic mushroom straight to your home. Enjoy an abundant harvest with a rich, umami flavor that holds its shape beautifully whether grilled, roasted, or pan-seared.

Description

Growkit Instructions:

Step 1

Unbox and Prep: Open your grow kit box to reveal the 2.5 kg premium sawdust and straw substrate block inside.

Step 2

The Top Cut: Unlike other oyster mushrooms that grow from the side, King Oysters prefer to grow upwards. Cut the plastic bag completely open across the top of the block, leaving a small collar (about 5 cm) of plastic standing up around the edges to trap moisture.

Step 3

Find the Ideal Climate: Place the kit in a spot with indirect daylight. For the best results, try to keep the ambient temperature around a cool, steady 18°C.

Step 4

Create a Humidity Dome: King Oysters thrive in high humidity (75-90%). Drape a humidity tent or a loosely punctured clear plastic bag over the kit to create a greenhouse effect.

Step 5

Mist Daily: Using a spray bottle, mist the inside walls of the humidity tent 1 to 2 times every day. Avoid spraying water directly onto the substrate or the growing mushrooms.

Step 6

Watch for Pins: Within a week or two, you will notice tiny, thick white stems with small brown caps (called “pins”) starting to form on the surface of the block.

Step 7

Let Them Tower: Continue your daily misting routine as the mushrooms grow tall and thick. When you lift the tent to mist, let a little fresh air flow in to help the stems develop properly.

Step 8

Twist and Harvest: The King Oysters are ready to harvest when the brown caps have flattened out, but before the edges begin to curl upwards. Gently grasp the stems right at the base, twist, and pull them free!
